Almond & Honey Soda Bread - Gluten Free

Soda Bread

  • 280 grams Blanched Almond Meal or Blanched Almond Flour
  • 1/4 tsp Cooking salt
  • 1.5 tsp Bi-Carb Soda (Baking Soda)
  • 130 grams sultanas
  • 2 Extra large eggs
  • 65 grams Unprocessed Honey
  • 2 tablespoons apple cider vinegar

Recipe's preparation

    Almond Soda Bread
  1. Preheat your Oven to 180˚C, and line a baking tray with Baking Paper. 

     

    If you're using Almond Meal, you need to break it down a bit further to create ALMOND FLOUR.  

    The trick is to process it in short, sharp bursts, so you don't turn it into a paste.  

     

    1. Place your Almond Meal, Salt, and Bi-Carb soda into the thermomix bowl, and whizz on SPEED 8, a few times, for 2-3 seconds each time, checking that you are creating flour and not a paste.  It took me about 3 little bursts to get it to the right consistency - you'll know it's ready when it resembles Coconut flour in look and texture.   

    If you've already sourced Almond Flour, simply weigh in the top three dry ingredients and whizz once on Speed 5 to combine.

    2.  Once you've got your ALMOND FLOUR mixture done, Add the remaining ingredients and mix on Counter-clockwise operation Speed 4 for around 8 seconds, or until just combined.  

     

    3.  Tip the contents onto the lined baking tray, and with wet hands, shape the dough into a flat disc, approximately 20cms in Diameter, and 2-3cms high.  

     

    4.  Bake for 20-25 minutes, or until the bread springs back slightly when gently pressed in the middle with 3 fingers.  If it still feels gooey, give it a bit longer.  Mine took the full 25 minutes. 

     

    5.  Allow the bread to cool completely on the tray before slicing.

     

    Serve with a cup of tea tmrc_emoticons.;-)

Tip

Subsitiute the Sultanas with other dried fruits of your choice, or try adding a handful of your favourite whole nuts in step 2.  

 

The reference to "Blanched" Almond Meal and Almond Flour denotes products that have been processed with the skins removed.  If you use Raw Almond Meal, you may find the dough is too watery.
