Recipe's preparation
-
Preheat oven to 180 degrees and prepare baking tin.
1. Weigh sultanas into a small bowl on top of your Thermomix bowl, add the rum, let it soak while going through the next steps.
2. Roughly chop the walnuts on Turbo 0.5 sec (repeat if necessary)
3. Add the sugar and lemon peel and mill 1min/speed10
4. Add all other ingredients except sultanas and walnuts and mix on speed 6 until smooth.
5. Add sultanas and walnuts and mix 30sec/rev/sp5
6. Pour mixture into prepared tin and bake for about 75mins on 180 degrees, until an inserted skewer comes out clean.
Keeps in fridge for up to a week.
