ANZAC BISCUITS

  • 125 grams Butter
  • 35 grams Maple Syrup, pure
  • 2 tbsp Boiling water
  • 1/2 tsp bicarbonate of soda
  • 160 grams spelt flour
  • 120 grams rolled oats
  • 95 grams Desiccated Coconut
  • 80 grams Coconut sugar or rapadura

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Preheat Oven to 175'C or 160'C Fan Forced.

    Place cubed butter + maple syrup in TM bowl and melt 2 mins, 60'C, speed 2.

    Scrape down sides of bowl.

    Add bicarbonate of soda and water and mix 5 seconds, speed 3.

    Add all remaining ingredients and combine 5 seconds, reverse speed 4.

    Using tablespoon sized heaps, roll into balls and place on baking tray lined with baking paper.

    Fatten balls (I liketo do so with a fork)

    Place in oven and cook for approximately 15mins, or until lightly golden.

    Leave to cool on trays before transferring.

Tip

If you like your Biscuits crunchier bake until very golden!!

    We love these. So much nicer than shop bought. I substituted the 160gms Spelt Flour with 60gms of coconut flour to make them GF. Had to cook them a little more too. About 25 mins
