- 2 apples, Skin on, cored and quartered
- 100 g Butter, Cubed
- 330 g Self Raising Flour
- 80 g brown sugar
- 30 g honey
- 1 teaspoon vanilla extract
- 2 eggs
- 250 g Milk
- 20 g Chia Seeds.
Preheat oven to 200°C. Grease Muffin tray (I usually get around 16-18 large muffins from this recipe)
Place apple into bowl and chop 3 sec/speed 7 or until apple is finely chopped. Remove apple and set aside until ready to use.
Place butter into bowl and melt 90 sec/60°C/speed 2.
Add S.R. flour, brown sugar, honey, vanilla extract, eggs, milk, chia seeds and reserved apple to bowl. Mix 10 sec//speed 4 or until combined.
Pour batter into muffin tins and bake 200°C for 15min or until an inserted skewer comes out clean.
