Apple & Cinnamon Muffins

Ingredients

  • 150 grams apple, Medium
  • 1 teaspoon cinnamon
  • 90 grams Butter
  • 1 egg
  • 180 grams Milk
  • 100 grams brown sugar
  • 1 heaped tablespoon Rice malt syrup, or honey
  • 250 grams SRFlour

Recipe's preparation

    Pre Heat OVEN to 200' c
  1. 1. Peel and roughy chop apple, Insert into mixing bowl CHOP speed 4 for 8 seconds - Set aside 


     


     


    2. Add butter to bowl (no need to rinse out remaning apple) MELT for 1.5mins, 60'c, speed 3


     


     


    3. Add Egg and Milk  MIX for 10 seconds speed 4 


     


     


    4. Add flour , rice malt syrup, cinnamon  & brown sugar MIX for 10 seconds, speed 4 - Scrape down sides of the bowl 


     


     


    5. Add reserved apple, combine speed 3-4 counter-clockwise operation 10 seconds


     


     


    6. Place Mixture into prepared Muffin tin - Bake 15 mins until golden and springy when touched.

Tip

These muffins need no icing, but look lovely with a dust of icing sugar to serve, FREEZE well for lunches

    Light and fluffy.

    I had a few wrinkly apples to use and found this gem of a recipe. I didn't peel my apples because I'm lazy but the skin doesn't detract from the muffin. I'm a fan of cinnamon so next batch I will add more but otherwise, delicious.

    I followed the recipe exactly and the muffins turned out perfectly - so moist and delicious. I sprinkled cinnamon sugar on top when they were still hot so it would partially caramelise. This is now a go-to muffin recipe.

    Quick and easy to make and tasted delicious. I didn’t remove the apple, just left it in the bowl as I worked through the remaining steps. I only used one apple (approx 150g) but next time would use two as you couldn’t really taste it.

    These are one of my favourites. I am a super lazy cook and have found that you can simply chuck everything in at once (after chopping the apple). I melt the butter (with the apple in the bowl) then put everything else in on top. I substitute honey for golden syrup and add 60g or so of sultanas. Perfect!

    First time I made these they were delicious. I Cooked on about 175 (by mistake) for 20-25 mins and they turned out well, sunk a little after but didn't stick to the cases or anything. My son loved them so much he ate the last three from the container, lucky the rest were in the freezer already.

    I used 3 apples ( about 350g) as I wanted to use them up, and it still turned out great! Cut the sugar down to 60 gram for my 15 month old and it was mildly sweet. Just the way I wanted it.
