  • 290 grams Wholemeal SR Flour
  • 100 grams brown sugar
  • 2 apples
  • 1 egg
  • 190 grams Milk
  • 85 grams olive oil
  • 1 teaspoons Nutmeg
  • 1 teaspoons cinnamon
  • 2 teaspoons Raw Sugar or Caster Sugar, Extra for topping.
  • 1 teaspoon cinnamon, Extra for topping.

Recipe's preparation

    Apple Muffins
  1. Preheat Oven 160 degrees (fan forced) .Line muffin tray with muffin or cupcake cases.

    Chop apples into quarters & add to TM bowl, chop 3 secs/speed 7.

    Add remaining ingrediants mix 10 secs/speed 4/ Counter-clockwise operation"Counter-clockwise operation"

    Scrape down side of bowl.

    Mix again 5 secs/speed 4/Counter-clockwise operation"Counter-clockwise operation"

    Combine extra sugar & cinnamon.

    Put spoonfull of mixture into cases, sprinkle with combined sugar & cinnamon.

    Bake into oven & bake for approx 20-25 mins.

Tip

Can add sultanas or dates for extra fruit.

Freezable.

Great for lunch boxes.

    These were delicious and so fluffy and (I hate using this word but it needs to be said 😆) moist! I made them into mini muffins for lunchboxes and just adjusted the cooking time accordingly.

    I used rice bran oil instead and reduced the sugar to 75g, probably could have even gone a little less. I didn't have anymore cinnamon after mixing the batter so just added the smallest pinch of brown sugar on top.

    These will definitely go on the rotation for regular lunchbox baking, and will experiment with adding other fruits and nuts in the future.

    Great easy apple muffin recipe. I replaced sugar with honey, oil with greek yogurt and added sultanas. Turned out beautifully light and moist. Definitely a keeper Smile

    Yummm! My 1YO and I sat here and smashed 3 each, only reason we stopped was to pick up eldest from Kinder. We will continue when we get home 😜

    Just whipped these delicious muffins up! They were a hit with all my fam (I have VERY fussy eaters and they loved them!)

    I used pink pink lady apples and no nutmeg coz I didn’t have any and they were still yum

    Great even with less sugar! I reduced sugar to 65g and perfect for my family. Instead of sugar and cinnamon on top I used a honey cream cheese icing (also lower sugar) and worked well together.
    Will make for the kids again as a big hit. I also used mild olive oil and worked fine. Thankyou.
