Apple Muffins
- 290 grams Wholemeal SR Flour
- 100 grams brown sugar
- 2 apples
- 1 egg
- 190 grams Milk
- 85 grams olive oil
- 1 teaspoons Nutmeg
- 1 teaspoons cinnamon
- 2 teaspoons Raw Sugar or Caster Sugar, Extra for topping.
- 1 teaspoon cinnamon, Extra for topping.

Recipe's preparation
Preheat Oven 160 degrees (fan forced) .Line muffin tray with muffin or cupcake cases.
Chop apples into quarters & add to TM bowl, chop 3 secs/speed 7.
Add remaining ingrediants mix 10 secs/speed 4/
Scrape down side of bowl.
Mix again 5 secs/speed 4/
Combine extra sugar & cinnamon.
Put spoonfull of mixture into cases, sprinkle with combined sugar & cinnamon.
Bake into oven & bake for approx 20-25 mins.

Great even with less sugar! I reduced sugar to 65g and perfect for my family. Instead of sugar and cinnamon on top I used a honey cream cheese icing (also lower sugar) and worked well together.
Will make for the kids again as a big hit. I also used mild olive oil and worked fine. Thankyou.

These taste great.I made 2 changes, used grapeseed oil (I find olive oil to be a bit heavy) and 2 teaspoons of mixed spice as I didn't have the separate spices.
