- 125 gram Butter
- 200 gram self-raising flour
- 150 gram caster sugar
- 65 gram Desiccated Coconut
- 1 teaspoon vanilla essence
- 2 eggs
- 250 gram sour cream
- 2 apples
- 2 tablespoon brown sugar

Recipe's preparation
Preheat oven to 160 degrees.
Grease and line a lamington tin
Melt butter in bowl. 60 deg, 2 mins, speed 4
Add flour, sugar, coconut and vanilla to butter. Mix Speed 3 for approximately 30 seconds or until mixture is well combined.
Press mixture into prepared tin and bake for 20 minutes.
While base is cooking peel and quarter the apples. Place apples in bowl and chop 2-3 seconds on Speed 4. If any large chunks remain, scrape down sides and repeat 2-3 seconds, Speed 4.
When base is cooked sprinkle apples over the top of the base then sprinkle over brown sugar.
Increase oven to 180 degrees.
Add eggs and sour cream to bowl. Mix Speed 5 for approximately 20 seconds or until smooth. Pour sour cream mixture over the apples.
Bake for another 20-30 minutes or until the top has set and is starting to colour. Allow to cool thoroughly before slicing into 3-4cm squares.

I love how quick and easy this recipe is, however I leave the eggs out completely. Not sure why they’re added to the sour cream, to be honest. My grandmother does a non-thermie version of this, and uses no eggs. I did add eggs the first time I made this, and they were all I could taste. It’s very delicious without the eggs, and a great way to use up old apples!

I was really excited to try this, as I am certain it is the slice we buy from a local cafe that I love. However, I think two eggs in the sour cream may have been a bit much because to me it tasted a little like quiche... my Husband liked it. Next time, I'll try with only 1 egg, otherwise the flavours are all there.

Very nice. I used lactose free yoghurt instead of sour cream, and like others also upped the number of apples. The yoghurt took a little longer to cook to a set texture, but only a few more minutes. Another great recipe to keep on hand.

Followed the recipe to a T with exception of using 4 apples instead of 2. I think then cream/egg mix could do with some vanilla sugar too, but otherwise, it’s a tasty slice that goes a long way! A great way to use up a tub of sour cream that was otherwise going to go off!

Some comments:
1. Before starting, make castor sugar first if you need to do so.
2..Use douible the amount of apples suggested.
3. The base was very crumbly on assembling and had to be rolled in the tray between baking paper to get it right. It turned out beautifully though.
4. Bake for longer or leave in switched off oven to make sure the top is set and golden.

Pre Thermie- i made the quick Apples sour cream slice which i love and have many variations of. Today i made the thermie version, it's baking in my oven right now. Instead of apple i used tinned pear ( just place on base when cooked), and walnuts chopped. A great combo and nice variation. Love this recipe

I made this yesterday to freeze for hubby's lunches. It was so nice there's only four slices in the freezer. I didn't have any sour cream so mixed Greek Yoghurt with the eggs on the top and it was still a 'Wow'! My girlfriend popped in just as I sliced it and she insisted on a 2nd slice just to be sure it was good enough. (She usually avoids sweet treats, so that was something!)
