Apricot, oat and sunflower seed bars

apricot, oat and sunflower seed bars

  • 70 grams oats
  • 5 tablespoon Desiccated Coconut
  • 4 tablespoon sunflower seeds
  • 70 grams raisins
  • 100ml --- freshly squeezed orange juice
  • 30 grams flaked almonds

Recipe's preparation

    Preheat oven to 180°C.
  1.     Place oats and coconut on separate ungreased and unlined baking trays. Toast oats and coconut until coconut is golden brown and fragrant, about 5 to 7 minutes.  Coconut browns quickly, so keep an eye on it. Remove both the oats and coconut from the oven and allow to cool. 

       Place oats and sunflower seeds into mixing bowl and press briefly 3-times/1sec/Closed lid/Turbo. Set aside.

    2.   Blend the apricots, raisins and orange juice for 10 seconds/speed 7.

    3.   Add the oat mixture, toasted coconut and flaked almonds. Stir for 10 seconds/speed 4.

    4.   Line a 25 x 18cm tin with baking paper.  Tip the mixture into the tin and spread into an even layer about 1cm thick.

    5.   Chill for about an hour in the refrigerator until firm and then slice into individual bars.

    I stabbed a guess with these and went with 100 grams. I think it worked out fine. Is setting now in the fridge & plan to top with a drizzle of dark choc when done. 

     

    I'm a busy mum of 3 who is passionate about cooking real food for my family. I love any recipe that is nutrient dense, quick and easy!
