  • 125g Butter
  • 500g Mixed fruit
  • 185g sugar
  • 1cup cold water
  • 1tsp baking soda
  • 1tsp mixed spice
  • 1tsp cinnamon
  • 1tsp Nutmeg
  • 2 eggs, beaten
  • 175g flour
  • 1tsp Baking Powder.

Recipe's preparation

  1. Grease and line baking tin.

    Place butter (cubed), fruit, sugar, water, baking soda and spices in bowl. Cook 10 mins @ 100, Reverse, sp 1.

    Cool and stand overnight if possible.

    Add beaten eggs, flour and baking powder to cooled mixture and mix 40 secs sp 2 Reverse using spatula to assist till all incorporated.

    Put into prepared tin and Bake 130C for 1.5 hours. Cool in tin 30 mins before turning out onto wire rack to cool completely.
