Banana and choc chip muffins (with hidden extras)

Cake Batter

  • 100 g brown rice, raw
  • 50 g pumpkin seeds
  • 50 g sunflower seeds
  • 50 g sesame seeds
  • 2 eggs
  • 100 g Butter
  • 2 ripe bananas, peeled
  • 100 g brown sugar
  • 250 g Milk
  • 1 teaspoon vanilla extract
  • 250 g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarb soda
  • 1 tsp cinnamon
  • 100 g choc chips dark

Recipe's preparation

    To make the muffin batter
  1. Heat oven to 150 C

    Weight the rice, sunflower seeds, pumpkin seeds and sesame seeds and grind speed 10/ 1 minuite.

    Add all ingredient ( exculding the choc chips) and mix for 20secs/ speed 5.

    Scrape down bowl and ad choc chips and then mix Counter-clockwise operation/ speed 3 / 10 seconds.

    Then place 1/3 cup in each muffin trays (prelined) for 10-15 mins or untill golden bown and risen nicely.

    One of our favourite muffins.  Sometimes we use chopped dates instead of chop chips.
