Recipe's preparation
Weigh banana into bowl then mash on Speed 6-7 , 5 secs or until desired consistency.
Weigh in rapadura, spices, flour, bicarb, walnuts and remaining wet
ingredients.
Mix on Speed 4 for 10 seconds until ingredients are just combined.
Line a large bread/loaf tin with baking paper.
Pour mixture into loaf tin and sprinkle the 2tbs of raw sugar over the top.
(This makes a delicious crusty top and if you toast the slices,
the sugar crytals caramelise along the top edge. Yum!)
Bake in a Moderate oven (170 degrees for fan-forced) for approx 45 mins

Fantastic! I just made this for the first time. I used 75g of raw sugar in the cake and more on top and 40g of olive oil and it was fantastic!! I will be keeping this recipe and making it lots more in the future, I always seem to have bananas and this seems a quite healthy option of using the older ones. Thanks so much for sharing.

This is a great recipe. Used a combination of sugar and honey as had no rapadura, might halve the nutmeg next time. Can't believe I forgot to add the walnuts though 🥺

BEST B-bread I’ve ever made!! (& I’ve tried a lot of recipes). This one produces a lovely fluffy centre with a crunchy top. Only used 75g raw sugar & didn’t have enough banana so made up balance with grated apple. Also added a couple of tablespoons of chia seeds. Topped batter with roughly chopped walnuts & sprinkling of oats, pumpkin seeds & raw sugar. DELISH!!

I reduced sugar by half and added in 5 dates (might try less next time). Also added in 2 tbsp of black chia, and it came out amazing. Definitely adding to my go-to recipes.

Perfect recipe. I halved as I only had 200g of bananas. I used wholemeal flour and added the suggested chia seeds. The bread is not too sweet so would not cut down the sugar. Delicious! Thanks for sharing.

Hi Wyn, thanks for your comment. With muffins I would try about 20 mins at 180. You would just have to trial and error a little. Just check them with a skewer to see if they come out clean.
I made this as a loaf and it
I made this as a loaf and it was delish. The topping formed a crust after spinkling of sugar on top and caramelising in the oven. I would like to make this as muffins. How long do you think I need in the oven? I want to make 12 altogether.
Just made this as I had some
Just made this as I had some ripe bananas to use up. It's really yummy and not too oily which I often find with banana bread. I used rice milk instead and forgot to put raw sugar on top. It's perfect though. I also used two smaller loaf tins and they only needed about 35 minutes in the oven!

OMG this was delicious. I tweaked it slightly to what I had available in the house but turned out beautiful. I added Chia seeds which gives it extra little crunch and used Coconut oil and wholemeal flour instead. Will definately make it again, thank you for sharing this lovely receipe. I bet this is delicious toasted with some raw honey drizzeled over it, unfortunately I don't think this loaf will last that long, will have to make another.
Enjoy
