  • 125 grams Butter, Cut into cubes
  • 1 level teaspoon vanilla essence / paste
  • 2 --- eggs whole
  • 200 grams SR flour
  • 1 level teaspoon bicarbonate soda
  • 1 level teaspoon Grated lemon rind
  • 160 grams Sugar.
  • 3 ripe bananas, peeled
  • 2 level tablespoons Milk (Any)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Line a 8"square (21cm) cake tin with baking paper. 

    Preheat oven to 170C.

  2. 1 Add ripe bananas to mixing bowl Closed lid. Mix Sp5 for 5 seconds.

    2 Add butter, sugar, rind & vanilla to bowl. Mix Spd 5 for 30 seconds 

    3 Add room temperature eggs. Mix Spd 5 for 30 seconds 

    4 Add SR flour, milk & bi carb soda. Mix Spd 4 for 2 seconds.

    5 Pour batter into lined cake tin. Bake 170C for 45-55 minutes. Cake is cooked once skewer comes out dry when tested in centre of cake. 

    6 Remove from cake tin onto cooling rack.

    7 Ice with favourite icing. I like a philly frosting on mine.

    Lovely cake similar to what I used to make pre Thermomix.  Please note though there is a typo in Preparation.  In row 4 it should say milk and baking soda, not powder.
