Banana Choc Chip Muffins

Ingredients

12 portion(s)

  • 100 grams raw sugar
  • 3 large very ripe bananas
  • 120 grams Grapeseed Oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 330 grams Self Raising Flour
  • 1 level teaspoon bicarb soda
  • 50 grams Milk
  • 230 grams choc chips

Recipe's preparation

    Preparation
  1. Preheat oven to 180 degrees.

  2. Mill sugar 10 secs speed 9.

  3. Add bananas, oil, vanilla and eggs.

  4. Beat 10 secs speed 6.

  5. Scrape down bowl.

  6. Add flour, bicarb and milk.

  7. Mix together slowly increasing speed from 1 to 6 for 5 secs.

  8. Scrape down bowl.

  9. Add choc chips ( I use Cadbury Milk Baking Chips ).

  10. Mix through 5 secs Counter-clockwise operation speed 4.

  11. Divide into 12 muffin wraps or cases ( in muffin tray ).

  12. Bake for 18-20 mins or until golden brown.

Tip

These muffins freeze really well, I make them every week for school lunches.

 Use Multix muffin wraps for best results, these are quite large muffins.

    Fantastic recipe, my kids are dairy free so used dairy free choc chips and oat milk. And reduced sugar to 60. I only had rice bran oil. Turned out fantastic!!!

    Oh my gosh, these were the fluffiest muffins I've made in a long time. Definitely saved this recipe. Dropped the sugar to 80g and will try 70g next time. Added 100g choc chips and approx 1C of frozen berries. Yum.

    This is my go to recipe when I have bananas to use up! I do a tray of 24 mini muffins and can almost get a full tray of 12 large muffins as well. A very generous amount of mixture. My girls love these muffins in their lunchboxes... and so do I! tmrc_emoticons.)

    I'm making my third batch of these in 3 days this morning. I did add some coconut to half of the first batch and that was a great variation.

    Made them all into mini muffins and got about 35. baked 13 mins. 

    I used Nestle melts and roughly chopped (so there's some with chunkier bits of choc... yum!).

    I have never been able to make muffins successfully - I can now!   I used a little olive oil instead and didn't have enough so put a little olive oil butter melted in to make up quantity and it still worked.   Thankyou for a fantastic easy recipe - a big hit.......

    I only had 80gm of grapeseed oil, so I made up the difference with butter.I used 3 VERY ripe (black and nearly runny) banana's and the flavour was great. I also used nestle dark choc chips, I find they melt a little bit but still hold some shape.

    Made these today...I hade mine in for 18mins, think my oven is high powered as they were crunchy on outside, but could of done a bit longer in the middle...the middle was a bit gluggy...will try again with a lower temp...kids enjoyed anyway.

    Had a nice mild flavour.  Not bananaery enough.  Perhaps I had small bananas? This was a very dense muffin and we tend to like soft and spongey.  Will try again, perhaps add more milk next time.
