- 5 overripe bananas
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 Cup Self Raising Flour
- 1 tablespoon baking powder
- 3 tablespoons brown sugar
- pinch of salt
- 3/4 cup milk
- caster sugar for dusting
- oil for shallow frying (I like to use coconut oil)
- 1 egg

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Peel bananas and add them, along with the sugar, salt and spices to thermomix bowl. Blitz these 6 seconds speed 4, or until you are happy with how broken down the bananas are (they will work out if blended smooth, or if left a little chunky).
2. Add the rest of the ingredients except the oil and caster sugar, and combine 15 seconds speed 4-4.5.
3. Heat oil in a non-stick pan to a medium heat and spoon tablespoonfuls of batter into the pan and fry each side until golden brown.
4. Remove the cooked fritters from the pan and immediately sprinkle caster sugar over the top of the warm fritters.

Although these tasted pretty good, they were unfortunately very raw in the middle. Adding eggs may help improve the batter.
