  • 5 overripe bananas
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 Cup Self Raising Flour
  • 1 tablespoon baking powder
  • 3 tablespoons brown sugar
  • pinch of salt
  • 3/4 cup milk
  • caster sugar for dusting
  • oil for shallow frying (I like to use coconut oil)

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1. Peel bananas and add them, along with the sugar, salt and spices to thermomix bowl. Blitz these 6 seconds speed 4, or until you are happy with how broken down the bananas are (they will work out if blended smooth, or if left a little chunky).

    2. Add the rest of the ingredients except the oil and caster sugar, and combine 15 seconds speed 4-4.5.

    3. Heat oil in a non-stick pan to a medium heat and spoon tablespoonfuls of batter into the pan and fry each side until golden brown.

    4. Remove the cooked fritters from the pan and immediately sprinkle caster sugar over the top of the warm fritters.
