Banana Muffin Mixture
- 90 grams Butter
- 1 egg
- 250 grams Milk
- 1 tbsp vanilla essence
- 2 ripe bananas
- 330 grams plain flour
- 170 grams castor sugar
- 2.5 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 1 pinch salt
Cream Cheese Icing
- 250 grams cream cheese
- 250 grams icing sugar
- 1 tbsp vanilla essence
Decorations
- 1 banana

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Turn oven on to 180°c. Line a muffin tray with 9 large cafe style liners (like pictured), or 12 normal muffin liners.
- Add cubed butter to bowl. Melt 2mins/80/speed"Gentle stir setting"
- Add egg, milk and vanilla to melted butter. Mix 10secs/speed1.
- Add bananas first. Then all dry ingredients. Mix 10secs/speed2. Scrape down sides of bowl. Mix for a further 10secs/speed2. Check for any banana chunks, and squish with spatula if any.
- Scoop mixture in to prepared muffin tray.
- Bake in oven for 25mins, or until just golden. Insert a wooden skewer and make sure it's dry, if necessary.
- Remove from oven once cooked.
- Place on wire rack to cool. - -ICING
- Place all icing ingredients in clean bowl.
- Mix 10secs/speed 2. Scrape down sides of bowl. Mix for a further 10secs/speed 2.
- Add more icing sugar if you'd like a thicker icing. Or a dash of milk if you'd like a thinner icing.
- Use a piping bag, to swirl icing on top of cooled muffins.
- Squeeze some caramel on top (I use a clip lock bag, and snip the corner a tiny bit).
- Add sliced banana and enjoy!

Tip
Best eaten that day. Or, freeze undecorated muffins, and decorate with icing as required.
The other muffins in this picture, are the 30 second whole orange cake, on this platform. I put the mixture in 9 cafe style liners, and made muffins instead. I used the same icing mixture, for both. But used orange zest, and poppy seeds for decorations.

Fabulous recipe thanks! I made dairy free with Olivani and soy milk, which made 12 big muffins. We iced with df butter cream, banana and coconut caramel sauce for a treat. Thanks!
