  • 2 eggs
  • 1 tsp vanilla extract
  • 1 banana
  • 175 g Milk of choice
  • 125 g unbleached plain spelt flour
  • 125 g spelt flour, wholemeal
  • 75 g raw sugar
  • 4 tsp baking powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees and line or grease muffin trays.
  2. Add butter or coconut oil to bowl and melt 3 minutes, 60 degrees, speed 1 or if using oil add to bowl and continue to next step.
  3. Add eggs, banana, milk and vanilla and combine 10 seconds, speed 4.
  4. Add sugar, flours, baking powder and combine 5 seconds, speed 4, scrape down sides of bowl and mix again for 5 seconds, speed 4.
  5. Pour into muffin trays and bake on 180 degrees for 18 - 20 minutes or until golden.

Tip

For variations you can add choc chips, blueberries, raspberries, spice, etc. If you don't have wholemeal spelt just use 250g of plain spelt flour.
