Banana, zucchini and plum bread

  • 1 banana, very ripe, Whole
  • 1 zucchini, Small or seeds removed if using a piece of a large one
  • 6-8 fresh blood plums, Stoned and quartered
  • 60 grams sugar, I use raw
  • 220 grams plain flour, Whole meal or white
  • 1 pinches salt, Optional
  • 1 level tsp bicarbonate of soda
  • 100 grams Milk, Whole or low fat
  • 2 level teaspoons vanilla extract

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Banana, zucchini and plum bread
  1. 1. Preheat oven to 180C or 170C fanforced.
    2. Grease and line a loaf tin.
    3. Add banana, zucchini, plums to bowl. 8-10 seconds speed 6 depending on how well you need to hide the zucchini 😜 Scrape down sides of bowl.
    4. Add butter and sugar. 22 sec speed 4. Scrape down sides again.
    5. Add eggs. 10 sec speed 4. Scrape sides.
    6. Add remaining ingredients. 20 sec speed 4. Scrape sides. Then 5 sec speed 4.
    7. Pour into prepared loaf tin.
    8. Cook 40-50 mins or until skewer comes out clean.
    9. Cool in tin for 10 mins before turning out.
    10. Dust with icing sugar if desired.
    11. Delicious warm or cold.

Tip

Other fruits could be substituted for plums or even try small amount of Kumara.

i only need to cook 40mins in my oven as we like it moist but test with skewer to make sure.

    This cake is delicious despite the recipe missing out the butter (I used 100g) and eggs ( used 2). I also used baking powder instead of bicarbonate of soda. This mixture is very wet so next time I will lessen or even omit the milk. It did not rise too well so I will try self-raising flour. It is a great combination and tastes very nice.

  • The butter and eggs were not in the list of...

    The butter and eggs were not in the list of ingredients so I had no idea how much to add when it came to step 4 and 5 of the method. I ended up adding 2 eggs and 70g butter. After baking for 50 min, it was still very uncooked inside, so I baked it for another 15 min, and then another 20 min - still uncooked. Next time I will try adding more flour. I'll leave it overnight and see if it's any better in the morning but I don't have high hopes...
