      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Set oven to 180 degrees.
    Place sugar in TM bowl and mill for 5 sec speed 10.
  2. Add butter and if it is straight out of the fridge chop for 5 sec spd 7.
  3. Scrape down sides and mix for 30 sec speed 4.
  4. Add vanilla extract and mix for another 30 sec speed 4 and while doing this add both eggs in through the top while the mixture is mixing.
  5. Add in milk and flour mix for another 15 sec speed 5 scrape down sides and then mix another 15 sec speed 5.
  6. Pour into standard cake tin or patty pans (makes about 20).
    I fill them to about 2/3 full they rise quite a bit.
  7. Bake at 180 degrees.
    Add ramekin of water to help prevent cake cracking
    Cup cakes take between 10 - 15mins
    Cakes about 20 - 25mins
    (test with metal skewer - it should come out clean when cooked)

Tip

I use an icecream scoop and spatula to pop in patty pans.

To make pouring the mixture out a little easier you can heat the mixture to 50 degrees in TM bowl as soon as it hits temperature remove and pour.

This cake recipe is always a winner.

225gm SR flour
