BERRY FROSTY FESTIVE CAKE (GF, DF, EF)

Ingredients

8 piece(s)

Base

  • 120 grams medjool dates (pitted)
  • 110 grams nuts (I use almonds & macadamias)
  • 60 grams Shredded coconut
  • pinch himalyan pink salt

Filling

  • 360 grams strawberries (frozen & hulled)
  • 100 grams banana (frozen & cut into pieces)

Topping

  • 150 grams macadamias (raw)
  • 150 grams coconut cream
  • 1 tsp Vanilla Bean Paste
  • 1 lime (juice only)
  • 30 grams Maple syrup

Garnish

  • 100 grams macadamias (raw)
  • 1 lime zest
  • 1 strawberry, sliced

Recipe's preparation

    Base
  1. Grease a 20cm springform cake tin with coconut oil and set aside.

    Add all base ingredients into mixing bowl and blend 20 secs / speed 9.

    Pour mixture into cake tin and press down firmly and evenly using the MC or back a spoon. Place into freezer.

  2. Filling
  3. Place frozen strawberries and banana into mixing bowl and blend 10 secs / speed 8.

    Insert butterfly, scrape down sides of bowl and then mix 45 secs / speed 4. Scrape down sides and blend again until a smooth texture is acheived.

    Place mixture into cake tin on top of the base. Spread out evenly and put back into freezer.

  4. Topping
  5. Place all topping ingredients into mixing bowl and blend 1 min / speed 9.

    Pour over filling and smooth out with spatula.

  6. Garnish
  7. Place macadamias and lime zest into mixing bowl and chop 10 secs / speed 8 or until desired result is acheived.

    Arrange on outer edge of cake and place strawberries slices in centre on cake in a star formation.

     

  8. Cover cake and place back into freezer for a minimum of 2 hours.

    Allow to thaw on bench for 10 mins before carefully running a knife around the inside of the cake tin and opening the springform. 

    Serve and eat!

    Store any leftovers in the freezer.
