Cake

  • 250 grams walnuts
  • 400 grams carrots, washed and roughly chopped
  • 2 eggs
  • 220 grams raw sugar
  • 160 grams EVOO (olive oil)
  • 1 tsp vanilla essence
  • 1/2 tsp mixed spice
  • 1/4 tsp salt
  • 200 grams plain flour
  • 1 tsp bicarb soda

Icing

  • 220 grams raw sugar, milled 10 sec, sp.10 to icing sugar
  • 90 grams cream cheese
  • 45 grams Butter, at room temperature
  • 1/2 tsp lemon juice
  • 6

Recipe's preparation

    Cake
  1. Preheat oven to 185 degrees celsius.

    Grease 25cm round cake tin/ line with baking paper, and set aside.

    Place walnuts into bowl and mill for 4 seconds on speed 9. Set aside.

    Place carrots into bowl and chop for 4 seconds on speed 5. Set aside with walnuts.

    Place eggs, sugar and oil in bowl and mix for 5 seconds on speed 5.

    Add vanilla, spice, salt, flour and bicarb to bowl and mix for 10 seconds on speed 5.

    Add walnuts and carrots and mix on REVERSE for 15 seconds on speed 2.

    Pour into cake tin and bake for 75 minutes.

  2. Combine all icing ingredients in bowl and mix for 20 seconds on speed 6.

    Ice cake when it has cooled.

    I made this twice already and they came out perfect. The last time I put half walnut and half almond, some pitted dates instead of sugar and throw some sultanas before baking, the cake is even more yummy. Thanks for the recipe.

    I love this carrot cake and have made it a number of times! It is so moist and yummy. With three coeliacs in the house and a nut free school, we require a gluten free and nut free version. All I do is leave out the walnuts, and use GF plain flour instead of the normal flour, and it is perfect, every time! You would hardly know it is gluten free! It is delicious enough without the icing, whitch I haven’t made yet.

    I usually need to grate the carrot a bit longer, and sometimes mix the final mixture through a bit longer, but otherwise I stick to the recipe.

    Amazing carrot cake!
    I didn't have enough carrots so used about 100g zucchini. After reading comments I added another egg and on step 5 ingredients didn't all combine so I had to stir through with a spatula which wasn't a big deal.I also reduced sugar in icing to 150g. Beautiful moist cake which is full of flavour and was loved by the whole family. Will definately be making again.

    To say I was dubious about this recipe would be an understatement. I was concerned about milling the walnuts, using plain flour and bi-carb soda. But, due to the number of positive comments I thought I'd give it a go. I'm so glad I did, everyone loved it.
    The texture was really nice, but next time I might not blitz the walnuts so much as I like a few chunkier bits. Also, as others have commented, the dry ingredients didnt mix into the wet ingredients with the instructions given. I actually incorporated them by hand in the end. I'll definitely use the recipe again though and just bear these things in mind.

    Made this over the weekend and after going through the comments, I made a gluten free version.
    I used rice flour, added an extra egg and cut the sugar back to about 140g but I also had about 4 dates that I had left over. I didn’t have any walnuts so I just left nuts out altogether.
    Then with the icing I used less sugar again, more cream cheese and a bit more butter.

    It was absolutely delicious! A very moist cake and very moreish!

    This is my favourite thermi carrot cake-i get compliments every time I make it. I often swap out the walnuts for 200g sultanas if I don't have any nuts. And I will admit to making a lot more of the cream cheese icing 🙊

    This cake is the bomb! I did it with sunflower seeds (i had 150g left) 100g of dates and use half oil and half nuttelex (to keep dairy free)
    I also only use 100g of sugar as dates help sweeten. I could of gone less and will do 60g next time.
    Cooked for 70mins (rotated half way)


    I then ice with a lemon icing
    Icing sugar, nuttelex and a bit of lemon juice (dairy free)

    It is sooooooo moist. Totally delicious!
    My husband thinks I'm amazing and my kids think I'm the best cook in town!! 😆😆😆

    I recently made two of these and layered one on top of the other with lots of yummy cream cheese icing as my birthday cake and everyone raved avout it! Thanks for a fantastic recipe!

    I can't comment on the taste, but in the last step of making the cake had to increase the speed from 2 to about 8 to get the ingredients to mix. And had to help it along by hand a bit too. I hope I haven't overmixed it. :-/

    Just made this into muffins which cooked for 25 minutes on 170 degrees. I followed other suggestions and reduced the sugar (150g) and added an extra egg. I also didn’t add walnuts so they can go to daycare. Haven’t made the icing yet, just enjoying straight out of the oven.

    Ive made this recipe a number of times, over the years and I just made it again after a year , but with a few adjustments.

    I uses 170g of raw sugar instead of 220g and it was plenty sweet - if you had fresh carrots you could cut down again.

    I didnt chop the walnuts but added them at end straight form pack (walnut pieces) as I like them chunky

    I added more mixed spice - as I really like it.
    I did find it more crumbly that the last time I made it - not sure why.

    No need for icing (although, Ive made it before and its YUM) - just some butter - my book club devoured it !

    I made a fair few changes based on other comments and also to cut down on the gluten. Here are my before and after cooking notes, I hope they help.

    before cooking notes...
    add extra egg
    more spices
    dont mill walnuts and carrot too fine
    cut down on sugar
    use butter and coconut oil instead of EVOO
    Brown sugar

    After cooking notes...
    used 3 eggs, maybe use another to bind as it was a bit crumbly
    used oat flour
    chopped walnuts and carrot roughly on about speed 5
    used 140 grams brown sugar
    used a mix of butter and coconut oil, I think 40 grams of butter and the rest coconut oil

    spices...
    1 1/2 teaspoons ground cinnamon
    1/2 teaspoon ground ginger
    1/2 teaspoon salt
    1/4 teaspoon ground nutmeg
    1/4 teaspoon ground cloves

    cooked for 50 min on 185 not fan forced, turning once cause my oven sucks

    used cream cheese frosting recipe from thermobliss

    The first carrot cake I've made and I've already made it twice in one week. Absolute crowd pleaser receiving high praise from self proclaimed Carrot Cake lovers - even the first one I made where I left the butter out of the icing (thanks baby brain!)
    my only adjustment is I swap out the flour for GF flour so hubby can enjoy it too.

    I currently have this cake in the oven and just hoping it turns out as lovely as everyone has mentioned - i had issues mixing the ingredients together at the end. I even increased the speed but ended up having to mix by hand.

    I divided the recipe into 2 of the mini loaf silicon trays from Kmart and it made 12 lovely cakes.

    Next time I'm going to:
    1) use more cream cheese in the icing (because I like it a bit thicker) and
    2) use a different oil (I used extra Virgin Olive Oil and it was a little overpowering) - any suggestions on that?
