Cake

  • 250 grams walnuts
  • 400 grams carrots, washed and roughly chopped
  • 2 eggs
  • 220 grams raw sugar
  • 160 grams EVOO (olive oil)
  • 1 tsp vanilla essence
  • 1/2 tsp mixed spice
  • 1/4 tsp salt
  • 200 grams plain flour
  • 1 tsp bicarb soda

Icing

  • 220 grams raw sugar, milled 10 sec, sp.10 to icing sugar
  • 90 grams cream cheese
  • 45 grams Butter, at room temperature
  • 1/2 tsp lemon juice

Recipe's preparation

    Cake
  1. Preheat oven to 185 degrees celsius.

    Grease 25cm round cake tin/ line with baking paper, and set aside.

    Place walnuts into bowl and mill for 4 seconds on speed 9. Set aside.

    Place carrots into bowl and chop for 4 seconds on speed 5. Set aside with walnuts.

    Place eggs, sugar and oil in bowl and mix for 5 seconds on speed 5.

    Add vanilla, spice, salt, flour and bicarb to bowl and mix for 10 seconds on speed 5.

    Add walnuts and carrots and mix on REVERSE for 15 seconds on speed 2.

    Pour into cake tin and bake for 75 minutes.

  2. Combine all icing ingredients in bowl and mix for 20 seconds on speed 6.

    Ice cake when it has cooled.

    Absolutely delicious! The top went crunchy while the bottom was beautifully moist. The icing was a tad too sweet for me even though I only used 3/4 the amount, and the cake would have been delicious with or without it. definitely will be making again

    Definitely the best ever carrot cake!!! So moist.
    I realised I had no plain flour, so used white spelt instead. Used walnuts & pecans as husband doesn’t love walnuts.
    Will definitely add this to my repertoire.

    Omg amazing. So moist and delicious. A few tweaks, less sugar (170gm and made up the remainder in dates which I blitzed also) and more spice (as others have said. And baked in a 22.5 x 33cm baking dish (at my son's house and not every pan available! It worked so well. Obviously not as high a cake but perfect with the icing! And then it also only needed about 40 minutes. Winner, winner!

    Umm yum.
    Beautiful without the icing as well.
    Made a mistake and accidentally added carrot to nuts before processing, still worked out. A tip for the lazy cook, you are welcome.

    Can not comment on icing as I did not have right ingredients, so made up a version of 250 g cream cheese, 1/2 cup of icing sugar and a squeeze of lemon.

    Adding to my faves.

    Delicious & very moist cake. Still amazing on the 3rd day. I milled raw sugar & light philly cheese for the icing & it was delicious. I used a 25cm cake tin & the cake was level which was great but didn't rise much. Suggest you make two cakes & layer them if you want a wow factor. Thanks for this recipe

    I reduced the sugar slightly to 200g so that I could add some sultanas (40g) and coconut (40g). I only had 160g of walnuts which was enough. I didn't use the thermo to chop the walnuts as I like chunky walnuts so I broke them and added by hand. I like more spice as well so added 1/2t cinnamon, 1/4t nutmeg and 1/4t allspice

    For my oven I cooked the cake at 160 for 75mins and it was perfect

    I didn't bother with the frosting and it was still amazing

    My household loved it. One for my favourites for sure.

    Didn't have enough walnuts so used half walnuts and half pecans and made into 12 muffins. Chopped the nuts by hand as the Thermomix does tend to mill them too finely. Very moist and absolutely delicious, especially with the cream cheese frosting. None left after morning tea.

    I think this was originally my recipe, published almost 20 years ago in the Age Epicure and also in Women's Weekly .....and served in my Tea Rooms at Linden Gardens, Mount Dandenong, Victoria.
    It wasn't made in the Thermomix then, of course and originally had pure icing sugar in the icing, not raw sugar. My favourite recipe of all time and kept my customers returning for more! Nice to see it converted to Thermie. Make sure you don't grate the carrot finely, or the cake will be too 'juicy' -keep it a course grate. Also, chop the walnuts into small chunks, definitely not like breadcrumbs.
    160 degrees Celsius is high enough in fan-forced ovens and it could take anything from 60-90 minutes, depending upon your oven, so check with a cake tester regularly and add only 5 minutes at a time to perfect according to individual ovens. Make sure you record your times for the future. Enjoy!!

    I just made this based on the 5-star rating and it has failed miserably. Reading through the comments I see that a lot of the people who've rated highly have tweaked the recipe and made their own variation...! So it's very misleading to see a highly rated recipe where a lot of users are actually not sticking to the recipe tmrc_emoticons.( I wish they would make a variation and rate their own recipe and not the original one!! 😒

    I made this cake yesterday, hoping it would be ok. Not only was it "Ok" it was positively delicious! I did have to do the icing twice, as using the raw sugar, it was still grainy after following the recipe. I changed to white sugar and the icing was amazing as well! 10 out of 10 for me!

    This cake was so delicious!! I just made it yesterday! I read through some of the comments and made variations to the recipe as suggested. I added an additional egg, put in 180grams of sugar and put in 100g of coconut oil & 60g of butter. I also added 2-2.5tsp of all spice and added around 140g of walnuts. It was perfect!! Will definitely make this recipe again. Smile

    Made this today and it was YUM! so moist, I didn't have enough walnuts, added the few grams of cashews I had, and then topped up with Pecans. I also didn't chop to fine, only couple secs, but even then I'd still leave chunkier next time, also carrot I did make finer LOL, but was awesome, used same amount of Sugar, without any drama about it being sweet, I also used icing sugar, as I was using up the bag, was awesome, my only drama, was waiting for the cake to cook to ice it! Oh my cook time was also only 45 mins to which I extended by couple mins, cooked on 170 (maybe 165) Fan thank you for this recipe tho it's awesome!

    Stuck to the recipe for first attempt, made cupcakes instead. Lovely and moist. Kept to cutting everything fine for the small people in my family! Will cut down the sugar and olive oil next time (maybe to half coconut oil as per a former comment). Also at the last mix I had to turn it up to 4 and triple the time to ensure it was all mixed. Thank you for a great recipe!

    Yummy!!! So I used half walnuts/half cashews and only wizzed for 2 sec as I like them more chunky. I could've just done for 1 sec actually. Then I had a heap of grated pumpkin in my freezer that I wanted to use so substituted the carrot for pumpkin. Only used 150g raw sugar, and half EVOO to half coconut oil. And upped the mixed spice. 

    So delicious and very moist.
