- 250 grams walnuts
- 400 grams carrots, washed and roughly chopped
- 2 eggs
- 220 grams raw sugar
- 160 grams EVOO (olive oil)
- 1 tsp vanilla essence
- 1/2 tsp mixed spice
- 1/4 tsp salt
- 200 grams plain flour
- 1 tsp bicarb soda
Icing
- 220 grams raw sugar, milled 10 sec, sp.10 to icing sugar
- 90 grams cream cheese
- 45 grams Butter, at room temperature
- 1/2 tsp lemon juice

Recipe's preparation
Preheat oven to 185 degrees celsius.
Grease 25cm round cake tin/ line with baking paper, and set aside.
Place walnuts into bowl and mill for 4 seconds on speed 9. Set aside.
Place carrots into bowl and chop for 4 seconds on speed 5. Set aside with walnuts.
Place eggs, sugar and oil in bowl and mix for 5 seconds on speed 5.
Add vanilla, spice, salt, flour and bicarb to bowl and mix for 10 seconds on speed 5.
Add walnuts and carrots and mix on REVERSE for 15 seconds on speed 2.
Pour into cake tin and bake for 75 minutes.
Combine all icing ingredients in bowl and mix for 20 seconds on speed 6.
Ice cake when it has cooled.

Super yum! Very well received as a birthday cake. On top of the icing I decorated it with dried flower petals.
Did some alterations:
3 eggs
175g raw sugar
1tsp mixed spice
1tsp cinnamon
220g flour
drained pineapple pieces
used Rice Bran oil instead of olive oil
For the icing:
250g cream cheese
Mill 4tsp raw sugar, with the rind of one lemon
Juice of 1/2 a lemon
Finished off with the butterfly on Sp 4 to get a slightly whipped consistency

Great recipe and it works for TM5. I just reduced the sugar to 100g and slightly reduced the carrot and add one more egg. I baked only for 45 mins at 180 degrees. For icing I increase the cream cheese and reduce the sugar by half and double the cream cheese and added lemon zest. It's perfect!

I took advice from past comments and did modify it slightly.
I added 100g dates and reduced sugar to 100g, added the extra egg and also added 100g of white chocolate chips (I dont think I would do this next time as I didn't really notice them). I added 1tsp of cinnamon and 1/4tsp of all spice instead of the mixed spice.
For the icing, I reduced the sugar to 60g, doubled the cream cheese and added about 150g of melted white chocolate to make more of a white chocolate and cream cheese ganache. I also left out the lemon. This was more to suit fussy family members who aren't huge cream cheese fans but it turned out so nice!
I used a 20cm cake tin and baked for 70 mins, rotating halfway through on the advice of previous posters. It was perfect timing, cooked through and still super moist.

I don’t understand why it calls for a 25cm cake tin as it wasn’t a huge cake mix. I used a deep 22cm square tin but should have just used my trusty 20cm deep round cake tin because I would have preferred a higher cake.
I took it out of the oven after an hour and it was done...could have taken it out 5mins earlier as it was a little dry.
I will also use white sugar to make the icing next time as I don’t like the yellow/caramel colour that is a result of using raw sugar...just a personal preference...😅

I love this carrot cake and have made it a number of times! It is so moist and yummy. With three coeliacs in the house and a nut free school, we require a gluten free and nut free version. All I do is leave out the walnuts, and use GF plain flour instead of the normal flour, and it is perfect, every time! You would hardly know it is gluten free! It is delicious enough without the icing, whitch I haven’t made yet.
I usually need to grate the carrot a bit longer, and sometimes mix the final mixture through a bit longer, but otherwise I stick to the recipe.

I didn't have enough carrots so used about 100g zucchini. After reading comments I added another egg and on step 5 ingredients didn't all combine so I had to stir through with a spatula which wasn't a big deal.I also reduced sugar in icing to 150g. Beautiful moist cake which is full of flavour and was loved by the whole family. Will definately be making again.

To say I was dubious about this recipe would be an understatement. I was concerned about milling the walnuts, using plain flour and bi-carb soda. But, due to the number of positive comments I thought I'd give it a go. I'm so glad I did, everyone loved it.
The texture was really nice, but next time I might not blitz the walnuts so much as I like a few chunkier bits. Also, as others have commented, the dry ingredients didnt mix into the wet ingredients with the instructions given. I actually incorporated them by hand in the end. I'll definitely use the recipe again though and just bear these things in mind.
