  • 225 grams light brown sugar
  • 15 grams golden syrup
  • 5 eggs
  • 240 grams plain flour
  • 5 grams mixed spice
  • 5 grams Nutmeg

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    METHOD
  1. Cream butter and sugar using whisk SP3 1 minute, scrape sides and cream a further minute. Scrape sides, remove whisk. Add Golden Syrup, then eggs one at a time, adding a little of the flour with the first one. Mix 30 seconds SP3. Add Brandy and Orange Juice, 20 seconds SP 3.
    Mix all dry ingredients and fruit together in a large bowl. Add wet ingredients and fold to combine.

Tip

I don't use mixed peel so I add more sultanas or currants.
