Blueberry Pikelets - Gluten Dairy Egg & Nut Free

Ingredients

16 portion(s)

  • 50 gram Ghee
  • 280 gram Gluten Free Bakers Flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 60 gram Coconut sugar
  • 1/2 teaspoon bicarbonate soda
  • 300 gram rice milk
  • 1 banana
  • blueberries, as desired
  • Ghee, for frying

Recipe's preparation

    METHOD
  1. Place Ghee into mixing bowl and melt for 40 sec/50c/speed 4. MC ON.

    Add all remaining ingredients EXCEPT blueberries and additional Ghee. Mix for 30 sec/speed 5. MC ON.

    Place a spoonful of batter into a low to med fry pan with melted Ghee. Place blueberries on top of batter and turn once bubbles appear on the surface. Repeat with remaining batter. 

    Serve with extra blueberries and honey or maple syrup.

Tip

This recipe is a variaton on the Pikelets recipe in the new EDC. 

These pikelets can be easily frozen. Reheat in the microwave or toaster.
