Ingredients

  • 400 g sugar
  • 225 gquality chocolate broken into pieces
  • 225 g Butter
  • 6 eggs
  • 250 g flour
  • 30 g instant coffee, powder
  • ½ teaspoon cinnamon
  • 225 g walnut pieces
  • Icing sugar to decorate

Recipe's preparation

  1. Preheat oven to 180˚C / 350˚ / gas 4

    Grease and flour 33 x 23 cm / 13 x 9 inch baking tin

     

    Place 350g sugar in bowl and mill 3 seconds on speed 9 – set caster sugar aside

    Place 50 g sugar in bowl and mill 10 seconds on speed 9 – set icing sugar aside for decoration at the end

     

    Place chocolate in bowl and grate 5-10 seconds on speed 8

    Add butter to chocolate and melt for 4 minutes at 50˚C on speed 3 (scrape down sides), ensure smooth consistency

     

    Add eggs and caster sugar, mix for 10 seconds on speed 5

     

    Add flour, coffee powder and mix for 20 seconds on speed 5

     

    Fold Walnuts into the mixture – reverse speed 4 for 5 seconds

     

    Evenly spread mixture in baking tin.  Bake for 45-50 minutes until skewer inserted in centre comes out clean.  Cool completely in tin on wire rack.

     

    When cold, cut crossways into 6 strips and then cut each strip into 4 pieces. Remove squares from tin; carefully sift icing sugar over half of each square store in single layer in airtight container.
