Caramel Coconut Slice

  • 100 grams Butter
  • 85 grams plain flour
  • 85 grams self-raising flour
  • 45 grams desicated coconut
  • 85 grams caster sugar


  • 60 grams Butter
  • 400 grams sweetened condensed milk
  • 100 grams golden syrup
  • 50 grams brown sugar


  • 2 --- eggs
  • 50 grams caster sugar
  • 120 grams desicated coconut
  • 30 grams Granola

Recipe's preparation

  1. Pre-heat oven 160C, grease and line a slice tin
    Closed lidPlace butter in bowl and heat 60sec/80C/speed 1
    Add flours, coconut & sugar and mix 15sec/Speed 4
    Remove from bowl and press crumb mix into prepared tin
    Bake for approx 12mins or until lightly browned: set aside to cool

  2. Filling
  3. Closed lidPlace butter in bowl and heat 60sec/80C/speed 1
    Add condensed milk, golden syrup and brown sugar - cook for 2min/80C/speed 3
    Pour filling over base and spread evenly with spatula
    Put aside and make topping
  4. Topping
  5. Closed lidAdd eggs, sugar, coconut and granola- mix 15sec/speed 3
    Sprinkle topping over caramel and spread carefully to cover
    Bake in oven for 20-25mins or until topping is lightly browned
    Leave to cool in pan before slicing to enjoy

You can omit the granola, personal choice, I like the extra crunch it gave. You could use shredded coconut in topping.
