Ingredients

Base

  • 70 g Desiccated Coconut
  • 170 g SR flour
  • 170 g brown sugar
  • 125 g Butter

Caramel

  • 160 g water
  • 200 g brown sugar
  • 220 g Milk powder (full cream)
  • 240 g Butter
  • 125 g golden syrup

Chocolate

  • 220 g Cadbury Dairy Milk
  • 1 tbsp Grapeseed Oil

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Base
  1. Melt 125g butter, 3 mins/50 degrees/speed2
  2. Add 170g SR Flour, 170g Brown Sugar & 70g desiccated coconut and mix 20seconds/Reverse/Speed 3
  3. Press into lined lamington tin and bake 12 mins at 180 degrees or until golden brown
  4. Caramel
  5. Add 160g water, 200g brown sugar, 220g milk powder, 240g butter and 125g golden syrup. Cook 10 mins/90 degrees/speed 4
  6. Pour over the hot base and bake in oven at 180 degrees for 15 minutes or until bubbly and browned
  7. Chocolate Top
  8. wash and dry mixing bowl
  9. place 220g chocolate in to mixing bowl and grate 8 seconds/speed 8
  10. Add 1 tbsp grapeseed oil and melt 2mins 30seconds/50 degrees/speed 2
  11. Pour over caramel and place in fridge to set.

    I seem to use a different recipe every time I make caramel slice, but not any more. I finally found a simple and delicious recipe. I added a little salt to the caramel.
    I'm really glad I lined the slice tin because the caramel expanded and would have overflown.

    So yummy. Thanks.
