  • 1 Carrot (medium), Chopped roughly
  • 1 Granny Smith Apples, peeled and cored, Chopped roughly
  • 1/2 Cup pecans
  • 2.5 Cups Self Raising Flour
  • 1 tablespoon caster sugar
  • 1/2 cup brown sugar
  • 1 heaped teaspoon mixed spice
  • 1/2 Cup Vegetable Oil
  • 1 egg
  • 3/4 cup milk

Cream Cheese Icing

  • 100 grams cream cheese, Softened
  • 75 grams Butter, Softened
  • 2 teaspoons lemon rind
  • 1.75 cups icing sugar
  • 1 level teaspoon lemon juice

Recipe's preparation

    Muffins
  1. Preheat oven to 190C/170C fan forced oven.

    grate carrot for 5 seconds, speed 8

    add apple and pecans, pulverise for 5 seconds, speed 4

    add dry ingredients, mix for 5 seconds, speed 4

    add wet ingredients, mix for 8 seconds, speed 4

    pour into prepared muffin and bake for 20-25 mins or until golden and firm to touch. Stand in pan for 5 mins before turning out onto cooling rack to cool completely

  2. Icing ingredients except icing sugar and mix for 15 seconds, speed 6 or until light and fluffy. Add icing sugar and mix for further 8 seconds, speed 4.

    spread onto muffins when cool

Sorry bout the measurements, this is my first shot at this recipe in the thermo and uploading it to the community!! Will update on second shot.

Also, these don't keep for very long, best enjoyed fresh with a cup of tea and friends!!
