Ingredients

Chelsea's Lactation Cookies

  • 2 tablespoons LSA
  • 4 tablespoons water
  • 250 g Butter
  • 200 g white sugar
  • 200 g brown sugar
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 260 g flour
  • 300 g rolled oats, The thick kind are best
  • 1 level teaspoon bicarbonate of soda
  • 1 level teaspoon salt
  • 3 tablespoons fresh yeast, USE BREWERS YEAST
  • 180 g chocolate chips

OPTIONAL EXTRAS

  • dried apricots
  • dates
  • dried cranberries
  • raisins
  • sunflower seeds
  • pumpkin seed
  • almonds
  • walnuts

Recipe's preparation

  1. *** Check the recipe on your machine matches what it says on the website for accuracy ***
  2. In a small bowl mix LSA & water, set aside.
    Preheat the oven to 180°C and line 2 baking trays
  3. Weigh in butter, white sugar and brown sugar. Mix 2 minutes speed 4
  4. Scrape the sides and mix 10 seconds speed 5
  5. Add in eggs, vanilla and LSA/water mixture from earlier. Mix 10 seconds speed 4
  6. Weigh in flour, thickcut oats, baking soda, salt, brewer's yeast and chocolate chips. Add in any additional extras.
    Mix for 20 seconds on speed 5 with reverse blades - use your spatular to mix while the blades are running. Repeat if needed
  7. Dampen hands and roll into golf ball size balls (you don't need to flatten them out)
    Bake for 12-15 minutes. Less if you like them chewy and more if you like them crunchy.
    Makes about 45

Tip

If you can tolerate a stronger taste add more brewer's yeast. You can also halve the recipe easily. These freeze really well - if they make it to the freezer that is
