Chewy Date Slice

Ingredients

20 portion(s)

Batter

  • 30g golden syrup
  • 160g chopped dates
  • 130g SR flour
  • 190g sugar
  • 80g Desiccated Coconut
  • 90g Butter, roughly chopped
  • 1 egg

Recipe's preparation

  1. Preheat oven to 180 degrees.

     

    Add butter to bowl.  50 degrees speed 4 for 1 min 30 secs.  Scrape down sides of bowl if needed.

     

    Add golden syrup and egg.  Mix speed 3 for 10 seconds.

     

    Add all remaining ingredients (flour, sugar, dates, coconut).  Mix speed 3 for 15 seconds.

     

    Transfer into a 18cm x 28cm slice tin lined with baking paper, cook in oven for approx 20-25 minutes until slightly brown on top.  Allow to cool and cut up into your desired serving size.  Enjoy!

Tip

This is my Grandma's recipe and I've kept it to exactly how she makes it as thats how we like it.  You may like to vary the recipe to suit, eg. use less sugar, use wholmeal flour, etc.  You can even try vary the fruit.

    This is delicious and very moreish! I used less sugar and the recipe still worked out fine. I used mejdool dates so the slice turned out beautifully moist and chewy.
