Chia Seed Muesli Bars



20 piece(s)

  • 110 grams mixed seeds (pepitas, sunflower seeds, linseeds)
  • 180 grams rolled oats
  • 50 grams Coconut Flakes (or shredded)
  • 70 grams pitted dates
  • 110 grams chia seeds
  • 105 grams dried cranberries or craisins
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 80 grams coconut oil
  • 240 grams honey
  • 45 grams light brown sugar

Recipe's preparation

  1. Preheat over to 180 degrees.  Line large deep baking tray (25cmx23cmx5.5cm) with baking paper

  2. Place mixed seeds, oats and coconut into large baking tray and bake for 10-20 minutes, stirring occasionally, until golden. Transfer to large bowl once golden

  3. Place dates into TM bowl and chop 3 sec/Speed 7  Transfer to large bowl

  4. Add Chia seeds, dried cranberries, vanilla extract and cinnamon into large bowl with rolled oats, coconut, mixed seeds and dates and stir to combine

  5. Place coconut oil, honey and light brown sugar in TM bowl and cook 60 degrees/5 min/Speed 1

  6. Pour mixture over the ingredients in large bowl and stir well to combine

  7. Spoon mixture into large lined baking tray and press into tin with MC or back of spoon

  8. Bake for 20-30 minutes or until lightly golden

  9. Set aside for 2 hours or until completely cooled then remove from tray and slice

If nut free is not required you can substitute the mixed seeds (pepitas, sunflower seeds and linseeds) for pecans and chop 3 sec/speed 5 prior to adding to baking tray with oats, coconut etc.

Store the muesli bars in an airtight container for up to 1 week

    The perfect muesli bar slice!

    They held together well and tasted great. I added sesame seeds and sultanas because I didn't have enough pumpkin/sunflower seeds and cranberries.
