Choc, Almond and Coconut Cookies

Ingredients

Cookie Dough

  • 6-8 Dates (pitted)
  • 4 tablespoons Boiling water, (to soak dates)
  • 250 grams Almonds raw
  • 50 grams dessicated coconut
  • 1 teaspoon baking powder
  • 1/4 teaspoon himalayan sea salt
  • 3 tablespoons Coconut Oil - Melted
  • 1 teaspoon Vanilla Bean Paste
  • 40 grams Dark Chop Chips, (opt. use 80grams in total of cacao or choc chips)
  • 40 grams cacao nibs, (opt. use 80grams in total of cacao or choc chips)

Recipe's preparation

    Cookie Dough
  1. 1. Soak dates in a small bowl with boiling water.

    2. Weigh almonds into thermomix - speed 9 for 30-45 seconds until almond meal is acheived.

    3. Scrape down sides of bowl.

    4. Weigh in the dry ingrediants as follows - coconut, baking powder and sea salt.

    5. Stir ingredients until combined on speed 3-4.

    6. Add the melted coconut oil, vanilla bean paste and soaked dates and water. Mix for about a min on a med to high speed to blend and incorporate the dates.

    7. Add Choc Chips and/or Cacao nibs and stir on speed 3-4 until combined.

    8. Shape dough into balls, place on baking sheet, press down and flatten into desired size.

    9. Bake until edges begin to brown, about 15 minutes at 160 degrees celcius

    10. Remove from oven and let cool before serving.
