Choc Chip Oat Cookies

Ingredients

30 piece(s)

  • 150 g dark chocolate, broken
  • 60 g canned cannellini beans, drained and rinsed
  • 1 egg
  • 60 g butter
  • 150 g brown sugar
  • 1 tsp vanilla essence
  • 110 g plain flour
  • 1/2 tsp bicarb soda
  • 120 g cup rolled oats

Recipe's preparation

  1.  Preheat oven to 190C and line 2 large oven trays with baking paper.


     2. Chop chocolate for 4-6 seconds on speed 6. (Large chunks not pulverised)    Set aside.


     3. Add beans, egg, butter, sugar and vanilla and process for 1 minute on  speed 6. Scrape sides half way.


     4. Add flour, bi-carb soda, oats and chocolate and knead for 1 minute in lid lock positionClosed lid and interval speedDough mode.


     5. Place heaped teaspoons of mixture onto lined baking tray, few cm apart, slightly flattened. Bake for 15 minutes or until golden around edges and cooked through. Transfer to a wire rack and allow to cool. Makes 30 cookies

Tip

This batter is great to make a few batches of and freeze in a log shape so when you have guests you can take out of freezer for 10 mins then slice and bake!


For a great variation try Apricot Coconut Oat Cookies


Omit the chocolate. Add 140g dried or Turkish apricots chopped and 50g coconut to step 4.     Use your imagination to make up other variations using any nuts or dried fruit.

    I make these all the time, but with some slight adaptions. I use red kidney beans and then sub a bit of the flour, for a bit of cocao and normally just use choc chips instead, or smarties!

    Everyone loves them and asks for the recipe.
