Chocolate Beetroot and blueberry muffins
- 100 g beetroot, peeled and roughly chopped
- 200 g dark chocolate, broken into pieces
- 120 g Butter, roughly chopped
- 200 g self-raising flour
- 100 g Coconut sugar
- 1 teaspoon baking powder
- 4 eggs
- 1 tablespoon Vanilla bean paste or extract
- 20 g cocoa powder
- 100 g blueberries
- 1 pinch salt

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Preheat oven to 180c
Place beetroot and blueberries into mixing bowl and chop 10 sec/speed 6-7. Set aside. Clean and dry mixing bowl.
Place chocolate into mixing bowl and grate 10 sec/speed 8. Set aside.
Place butter into mixing bowl and melt 2 min/70˚C/speed 2.
Add reserved beetroot, blueberries and chocolate, flour, sugar, baking powder, eggs, vanilla and cocoa powder and combine 30 sec/speed 5, or until well combined.
Transfer mix to muffin cases and bake for 15- 20 minutes on 180c or until an inserted skewer comes out clean. Allow to cool for 5 minutes and transfer to a wire rack to cool completely.

Tip
You can leave the beetroot out if you prefer, just add another 100g blueberries or raspberries instead. These muffins are great for lunchbox snacks.

Very, very nice. Easy to make but the only thing is I had to cook for 25 mins at 180 C but my oven is a wee bit out. Will definitely make these again.

I have made these twice now and my family loves them! I left out the blueberries and put a tsp of dairy free dulche de leche (Quirky Cooking) on the top of each one before cooking and they were delicious. Great recipe, thanks for sharing

These are delicious. I iced them with ganache from the basic cookbook. Also, chop the chocolate first and don't worry about rinsing the TM bowl out. And I used frozen blueberries which i think added moistness. Yum.

I couldnt see an oven
I couldnt see an oven temperature, so pre heated to 180c and they took approx 20mins. Yummy.
