- 210 g caster sugar
- 1 teaspoon vanilla essence
- 1 egg, beaten
- 2 tablespoons cocoa

Recipe's preparation
Pre heat oven to 180C/160C fan forced. Line 2 baking trays with baking paper.
Place butter, sugar and vanilla in TMX bowl and mix on speed 6 for 1 minute or until light and fluffy. The mix on "Counter-clockwise operation" speed 1 for 30 seconds.
Add egg and beat on speed 8 for 30 seconds or until creamy.
Add cocoa and flour and mix on speed 7 for 20 seconds or until well combined. Scrape down sides and mix again on speed 7 for 20 seconds.
Drop rounded teaspoons of mixture into mounds on trays, allowing room for spreading. Bake for 10 minutes. Cool on trays until firm; transfer to a wire rack to cool completely. Store in an airtight container.

I've made these a few times now, and they are always a hit! If I use a level tablespoonful, the recipe makes about 36 biscuits.

We made these for a school share a plate (sweets). I found I couldn't mix for a long as it asks for as there wasn't enough mixture and it was done in less time. Overall great tasting and easy to make!
