Cheesecake mixture

  • 250 grams cream cheese, cubed, at room temperature
  • 115 grams caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 40 grams plain flour

Recipe's preparation

    Cheesecake mixture
  1. Preheat oven to 170C. Line a 16 x 26cm slab pan with non-stick baking paper.

    Add cream cheese and sugar to bowl. Gentle stir setting 20 seconds, speed 4 until smooth. Add eggs 20 seconds speed 4.

    Add vanilla extract and flour 10 seconds, Counter-clockwise operation speed 3 until just combined. Place in another bowl and clean and dry mixing bowl.
  2. Chocolate Mixture
  3. Add chocolate and butter to bowl Gentle stir setting 3 minutes, 60 deg, speed 2. Stop when chocolate is completely melted. Cool slightly.

    Add sugar and eggs 20 seconds, speed 3.

    Add flour 10 seconds, Counter-clockwise operation speed 3.

    Spoon Cheesecake mixture and chocolate mixture alternatively into the pan. Make a swirled pattern with a skewer. Bake 20-25 minutes or until crumbs cling to a skewer when inserted. Set aside to cool completely.
