Chocolate Chip Cookies

Ingredients

60 portion(s)

  • 180 grams Butter, cubed
  • 200 grams caster sugar
  • 1/2 teaspoon vanilla essence
  • 1 egg, lightly beaten
  • 320 grams Self Raising Flour
  • 180 grams chocolate chips

Recipe's preparation

  1. Preheat oven to 180 ̊C. Line 4 baking trays with baking paper.

  2. Put butter, caster sugar and vanilla essence in TM bowl, mix 20 seconds/speed 6. Scrape down the sides of the bowl then mix 10 seconds/speed 6. Scrape down the sides of the bowl again.

  3. Add egg and self raising flour then mix 20 seconds/speed 5. Scrape down the sides of the bowl.

  4. Add chocolate chips and mix 10 seconds/reverse/speed 4. If needed finish mixing through by hand.

  5. Tip mixture onto TM mat. Place teaspoons full of mixture onto prepared baking trays, flatten slightly. Allow room for biscuits to spread.

  6. Bake for approximately 10 minutes, until slightly browned. Leave to cool on baking tray for 5 minutes before moving to a wire rack to cool completely.

    I reduced the amount of sugar to 170grams and the choc chips to 100grams, very nice, but I think next time I will keep the amount of choc chips but reduce the sugar to 150grams, good easy recipe.

    I did a few changes like used wholemeal spelt flour, rapadura and only 100g of choc chip cookies but this base recipe is great! Makes the perfect cookies!

    Now making my third batch in 2 days. So yummy. I love that they stay nice and chewy, not crunchy. Super easy to make and didn't even need to go to the shop - just pantry staples! These are not going to be good for my waistline tmrc_emoticons.)
