Cupcake
- 420 grams sugar
- 290 grams plain flour
- 80 grams cocoa
- 1 1/2 level teaspoon baking powder
- 1 1/2 level teaspoon bicarb soda
- 1 level teaspoon salt
- 2 eggs
- 230 grams Milk
- 95 grams vegetable oil
- 2 level teaspoon vanilla extract
- 1 Cup boiling waterq

Recipe's preparation
Weigh sugar, flour, cocoa, baking powder, bicarb soda, and salt and mix speed 6 for 30 seconds
Add eggs, milk, oil, and vanilla, mix for 30 seconds on speed 5
have cup of boiling water ready, start on speed one pour water in slowly over about 10 seconds increasing speed to speed 5, mix for 30 seconds.
Pour into jug as makes a very thin mix, pour into cupcake tins, and bake at 180 for around 15 mins till skewer comes out clean
Makes the most moist cupcakes, and they freeze fantastic, great with buttercream icing,

but at a guess i would bake at same temperature for at least 30-40 minutes
you could check after 30 minutes and see if more time needed. good luck:

AMAZING! loved these cupcakes and so great that this recipe makes double the batch. I ended up with 25 cupcakes and it was just what I was aiming for. I only used 220g of sugar and it was delicious with buttercream and I had so many compliments on this cupcakes. Definitely my go to recipe.

HaHa - I only had coconut oil and half the cocoa so I used raw cacao instead - so mine probably taste very different yours but still delish and I loved pouring out of a jug - no messy spoons and trying to stop kids licking and re dipping

im so sorry alison that you had such a fail, as have been making these cupcakes for years and have never had a problem.
the only thing i can think of is perhaps the oven temp wasnt high enough or they wernt cooked long enough.
the mix is a very thin liquid mix not a thick batter type mix but i have never had a problem with it.
did you cook cupcakes or a whole cake?

These are delicious! My favourite texture - moist with a lovely crumb. I heavily reduced the sugar but kept the cocoa as I love a strong chocolate taste. A bit of the cake tended to stay on the wrapper - not sure why?

Thanks - these were winners! Like many others, I reduced sugar (to 350 g) because 400 g sounded like so much but then of course, we're making a double batch of cupcakes! Recipe worked well.

Really nice and easy - very fluffy and moist - I halved the recipe because I only wanted 12. Couldn't resist putting some mini Easter eggs in the middle - just cause they are around at the moment - nice warm but keen to know how they will be when they are chilled.
