Chocolate Melting Moments With Peppermint Cream

Melting Moments

  • 250 grams Butter, softened
  • 75 grams icing sugar, sifted
  • 1 teaspoon vanilla essence
  • 270 grams Self Raising Flour, sifted
  • 50 grams Good Quality Cocoa Powder, sifted

Peppermint Cream

  • 90 grams Butter
  • 75 grams icing sugar, sifted
  • 1/2 teaspoon Peppermint Essence, or to taste
  • Green Food Colouring (or spinach juice)
  • milk, if required

Recipe's preparation

    Melting Moments
  1. Pre-heat oven to 180 degrees celcius.

    Place butter, icing sugar and vanilla in bowl and mix for 30 seconds on speed 4.

    Scrape down bowl and mix for a further 30 seconds on speed 4.

    Add flour and cocoa and and mix for 15 seconds on speed 4.

    Scrape down bowl and mix for a further 15 seconds on speed 4.

    Refrigerate mixture for 15 mins. 

    Roll into walnut sized balls, place on a lined baking tray and press each ball with a fork. Alternatively you can roll mixture into a log and slice into rounds.

    Bake for 12 - 15 mins.

  2. Peppermint Cream
  3. Place butter into bowl and mix for 30 seconds on speed 4 - 5.

    Scrape down bowl and mix for a further 30 seconds on speed 4 - 5.

    Add icing sugar, essence and food colouring and mix for 15 seconds on speed 4 - 5.

    Scrape down bowl and mix for a further a 15 seconds on speed 4 - 5.

    Depending on the consistency you may need to add more icing sugar if too runny or a little milk if too stiff.

  4. When biscuits are cold, fill with peppermint cream.

    Too much cocoa powder

    Too much cocoa powder made these melting moments disgusting.  They were powdery, floury and stuck in your mouth. Inedible, and a lot of time wasted making them.

    Awesome! Very rich and sweet. Perfect for the festive season. Great idea. Before adding icing, make sure the biscuits are cold and handle with care. Place in fridge for a good couple hours or overnight before eating because the biscuits will fall apart. Otherwise enjoy!

  • Decided to make these to take

    Decided to make these to take to a morning tea catch up tomorrow. Only to get to the peppermint cream stage and realise that I'd run out of peppermint essence haha. So I switched it up a little and used the orange essence and a little grated orange peel, along with some yellow and red food colouring to make Jaffa Melting Moments instead. Pretty tasty indeed  Big Smile. Have to get some peppermint essence so I can do it properly though soon  tmrc_emoticons.)

    These were my first attempt at melting moments, and they turned out brilliantly!  Today was the 'trial run' and now I know what my neighbours are getting for Christmas!
