Recipe's preparation

  1. Preheat oven to 160.  Place 12 paper baking cups into a muffin pan.

Put dark chocolate chips and butter into TM bowl and heat for 4 minutes, 50 degrees, speed 2 - or until chocolate and butter have melted and combined.

Remove chocolate mixture from TM bowl and set aside.  Rinse and dry your TM bowl.

Place raw sugar into TM bowl and mill for 3 seconds on speed 9.  Insert butterfly and add eggs.  Whip for 3-5 minutes on speed 4 or until pale and thick.

Spoon mixture into the cupcake papers and bake for approx 20 minutes.  The cupcakes will be soft and gooey in texture and appearance.  Remove pan from oven and allow to cool for 5 minutes in pan before removing them and allowing them to cool completely on a wire rack.

Once completely cool, decorate with your choice of frosting.

My 9 year old daughter and I made these cupcakes and decorated them with chocolate buttercream frosting to take for her classmates to celebrate her birthday. Very happy with them. Quite easy to make. Only filled up half the cupcake wrapper as they rise when baked.

These are delicious, mine didn't sink in the middle but did lower slightly when coming out of the oven, this doesn't worry me as they are yummy and moist and converted to gluten free easily!

Lovely moist dense cupcake - I used half dark / half white choc and substituted raw sugar for 1/3 raw, 1/3 rapadura, 1/3 coconut sugar - next time will just use coconut sugar.

Absolutely devine!  Made for my son's birthday - in addition to a just in case packet mix - and these cup cakes won hands done on the taste front!  Needed to cook for a little longer though than suggested - but I think it could be my oven.a Big Smile
