Christmas Shortbread with White Choc Chip and Cranberries

  • 75 grams raw sugar
  • 225 grams plain flour
  • 80 grams White Choc Chips
  • 80 grams cranberries, dried

Recipe's preparation

  1. Preheat oven to 180 degrees C

    You'll need a 24 hole mini muffin tin, or 2 x 12 hole mini muffin tins.

    Cream Butter and Sugar for 4 mins/ sp 4, scraping down sides after every minute.

    Mix in plain flour  10s/Counter-clockwise operation/sp4

    The mixture won't have all come together, but thats fine.

    Mix in Choc chips and Cranberries 30s/Counter-clockwise operation/sp1

    Place heaped teaspoonfuls into mini muffin trays, ( No need to grease the muffin tins), flattening the mixture so its nice and smooth. I made mine about 12mm in thickness.

    Bake until just lightly golden.

    Allow to cool in trays, then tap them out when cool 

    Enjoy

Tip

The choc chips and cranberries give these shortbreads a festive feel.

You could also add or substitute nuts, ginger, milk or dark choc chips etc
