Ingredients

Cinnamon ginger cake with caramel icing

  • 125 g Butter, softened
  • 75 g caster sugar
  • 1 egg
  • 265 g golden syrup
  • 260 g plain flour
  • 1 teaspoons cinnamon
  • .5 level teaspoons bicarbonate of soda
  • 2 level teaspoons ginger
  • 180 g hot water

  • 60 g Butter
  • 110 g brown sugar
  • 2 tablespoons Milk
  • 240 g icing sugar
  • 1 teaspoons vanilla extract

Recipe's preparation

  1. Preheat oven to 180°C (160°C fan forced). Grease deep 20cm (8-inch) round cake pan.
  2. Insert butterfly whisk. Add butter and sugar into TM bowl. 10sec/sp 3
  3. Scrape down sides. 10sec/sp 3
  4. Add egg and golden syrup. 10sec/sp 3 scrape down sides. 10sec/sp 3
  5. Add dry (preferably sifted) flour, bicarbonate soda, ginger, cinnamon and hot water 5sec/sp 3
    Scrape down sides. 3sec/sp 3
  6. Bake cake about 1 hour, test around 50 min mark. Stand cake in pan 5 minutes before turning, top-side up, onto wire rack to cool.
  7. Clean TM
  8. Make caramel icing. Add butter and sugar to bowl, 2min/90°C/sp 1.5 or until butter is melted and sugar dissolved
  9. Add milk 1min30sec/90°C/sp 2
  10. Insert butterfly whisk. Add icing sugar and extract.

    20sec/sp 3. Scrape down sides halfway and continue.
    Spread over cold cake, dust with cinnamon.
