Cinnamon Holly Biscuits

  • 300 g flour, self-raising
  • 90 g unsalted butter
  • 2 level teaspoons ground cinnamon
  • 90 g brown sugar
  • 90 g golden syrup
  • 1 egg

Icing

  • 200 g icing sugar
  • 50 g lemon juice
  • 1 --- packet of mint leaves
  • 1 --- packet of red M&M's, or red Smarties or jaffas

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    To make the biscuits
  1. Place flour, butter and cinnamon in bowl and mix 5 seconds speed 6 until combined.
  2. Add sugar, syrup and egg and mix 30 seconds speed 3 until mixture comes together.
  3. Dough mode2 minutes then remove from bowl and wrap in plastic and refrigerate for 30 minutes.
  4. Preheat oven to 180°C and grease and line 4 trays.
  5. Roll dough between two sheets of baking paper until 5mm thick. Using a 6cm round cutter, cut rounds from dough and place on baking tray. Bake 8-10 minutes until firm. Allow to cool completely on trays before icing.
  6. Icing
  7. Place icing sugar and juice in a small bowl and mix until you get the right consistency (easy enough to spread onto biscuits but not so runny that it would run off them!). You could do this in the thermomix but I use a small bowl instead so I can keep an eye on the consistency.
  8. Spread icing onto cooled biscuits and decorate with mint leaves and M&M's/Smarties/Jaffas. I always use Jaffas so I don't have to buy a whole lot of M&M's or Smarties just so I can get red ones!
  9. When icing has set, store in an airtight container with baking paper between the layers.

Tip

Use the spatula to get the dough out of the bowl. My son reckons Christmas doesn't start until I've made these!

    These are really fun & easy to do with the kids. I opted for gluten free flour, and omitted half the sugar. I also omitted the icing, and simply made smiley faces with left over dough. Really yum!
