Ingredients

20 portion(s)

  • 150 grams Coconut Oil, solid
  • 100 grams brown sugar
  • 120 grams coconut sugar or raw sugar
  • 2 teaspoons Vanilla paste or extract
  • 100 grams Coconut - shredded or desiccated
  • 100 grams Quinoa flakes
  • 350 grams spelt flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon Bi Carb Soda

Recipe's preparation

    To Make th cookie dough
  1. melt cocnut oil in jug 70 degrees for 3 min

    add both sugars

    add vanilla

    add eggs

    mix sp 5 for 10 sec

    add coconut

    add quiona

    mix 5 sec spd 5

    add spelt flour

    add bi carb

    add baking powder

    mix 20 sec on spd 5

     

    place rounded teaspoonfuls onto lined tray

    bake approx 10 min at 180 degrees

    allow to cool before removing from tray as they will be very soft

    Nice, however I think I would prefer a stronger coconut flavour. I did use raw sugar so next time I will use coconut sugar to see if the flavour is more intense. Thanks for sharing.
