Coconut and Lime Ricotta Cake with Caremelized Pineapple.

Ingredients

Ricotta Cake

  • 500 grams Fresh ricotta
  • 1 egg
  • 1 can coconut cream
  • 3/4 cup sugar, Make your own caster sugar
  • 1 lime juiced, And zested
  • 1 --- qty shortcrust pastry, Sweet

Caremelized Pineapple.

  • 1/2 Pineapple fresh, Small
  • 40 grams Butter
  • 2 heaped tablespoons brown sugar

Recipe's preparation

    Cake
  1. Line bottom of prepared springform cake with shortcrust pastry. Prick with fork and chill for 15 minutes. Blind bake with pastry weights in oven 175 degrees for 10 minutes. Remove weights an continue baking another 10 minutes, cool.  Add all the ingredients for the cake mixture to the TM bowl and blend on speed 6 for 20 seconds. Scrape down sides and blend again until smooth. Pour over cooled pastry and smooth surface. Bake for 30 minutes at 170 until set, but should still be wobbly in the centre.refridgerate overnight. Remove from pan when ready to serve and prepare pineapple. Arrange on top and drizzle sauce over.

  2. To prepare pineapple, peel and core, then slice thinly. Melt butter over medium heat in large nonstick frypan before adding pineapple. Increase heat slightly and sauté on each side 2-3 minutes until softened. Sprinkle over brown sugar and stir until sugar is melted. Decorate cake.

Tip

Use a 20 cm.spring form cake pan lined with baking paper and butter sides before adding cake mix. If preferred you could substitute pastry base for a crushed biscuit one, butternut snaps or chocolate ripple mixed with butter and pressed into base then treat as per pastry works well. Make your own ricotta, it is soo much nicer and much cheaper as well.
