Ingredients

Coconut orange pudding cake

  • 1 orange, Rind and juice only
  • 180 g sugar
  • 250 g plain flour
  • 1/2 tsp bicarb soda
  • 1.5 teaspoons baking powder
  • 1/2 tsp salt
  • 3 --- eggs
  • 200 g yoghurt, Natural or vanilla
  • 120 g oil, Coconut or canola etc
  • 1 package Cottees Vanilla pudding mix
  • 1 dash vanilla extract
  • 1 dash coconut essence
  • 40 g dessicated coconut

Frosting/ Glaze (optional)

  • 250g g icing sugar
  • 2 tsp Butter, soft
  • 50 g orange juice, Reserved from the peeled orange

Recipe's preparation

    How to:
  1. Preheat the oven to 160Blend"Blend"

    Grease and line a med/large size loaf pan or bundt tin.

    1. Add sugar and orange rind to the Closed lid"Closed lid"
    Blitz sp 9/10secs.

    2. Add remaining ingredients except for the glaze. Add a squeeze of the orange juice if it's a little dry.

    3. Blend sp 5/20 secs. Scrape and repeat if necessary.

    4. Spread into prepared pan.
    Bake for 1 hour, or until cooked when tested.

    Cool on a rack, before icing (optional).


    Frosting /Glaze: (optional)

    Add icing sugar and butter to the [closed lid] and blend sp 4/ 10 seconds.

    Add enough of the orange juice to make a thin glaze or thick frosting, through the MC hole, sp 4.

    Drizzle over the cake.
