Coconut Banana Cake

Ingredients

20 slice(s)

Cake mix

  • 125 grams Butter, softened
  • 220 grams caster sugar
  • 1 level teaspoon vanilla essence
  • 2 eggs
  • 300 grams Self Raising Flour
  • 2 ripe bananas, chopped into thirds
  • 90 grams Desiccated Coconut
  • 240 grams Milk

Recipe's preparation

  1. Pre heat fan forced oven to 160 degrees.


    Place caster sugar and softened butter (chopped into cubes) into the TM bowl. 


    Close lid and mix for 30 secs on speed 4. Add teaspoon of vanilla extract, and mix for another 15 secs, speed 4.


    Add remaining ingredients in the order listed.  Allow ingredients to sit in the bowl, not mixed for a few minutes.  Then mix on speed 4 for 60 seconds.


    Scrape down sides of bowl and repeat mixing if required for 10-15 seconds.


    Place in greased and baking paper lined square cake tin (approx 20cm squared) and bake in slow oven for about 50 minutes.


    Serve with cream cheese icing with fresh passionfruit drizzled on top; or normal icing with sprinkled coconut on top.

Tip

Cream cheese frosting:

60g softened butter

60g cream cheese

320g icing sugar

1 tablespoon of passionfruit pulp

(place cream cheese, butter and sugar into mixing bowl and mix on speed 4 for 30-40 seconds).  Add passionfruit pulp and Counter-clockwise operation for 10 seconds. Spread over cake and enjoy!

    Nice cake and easy to make. I used a 20cm round tin (as I don't have a square one) so took a little longer to cook. I also had a bit of batter leftover which I cooked as muffins. They took 25 mins to cook. Will make again.
