Cranberry and pecan cookies

Ingredients

  • 100 grams Pecans, chopped
  • Rind of one Orange
  • 140 grams raw sugar
  • 225 grams Butter, softened
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 280 grams plain flour
  • 55 grams dried cranberries

Recipe's preparation

  1. Mill sugar with orange rind 5sec/sp9 and scrape down bowl.

    Add butter, egg, vanilla, flour and cranberries. Mix 20sec/sp4.

    Empty bowl onto Thermomat and shape into two logs (approx 15cm long, 5cm diameter). Roll each log in chopped pecans until well coated and wrap in gladwrap. Place in fridge for at least 1 hour to firm up.

    Preheat oven to 160deg and line 2 trays with baking paper. Unwrap the dough and slice carefully  into discs. Place on prepared trays and cook for about 10-12 minutes. Leave to cool on trays for 10 mins then transfer to wire racks to cool completely.
