Cranberry Coconut Biscuits

Ingredients

Biscuits

  • 200 g Butter, softened
  • 1/2 teaspoon vanilla extract
  • 160 g icing sugar
  • 1 egg
  • 65 g Cranberries
  • 40 g Shredded coconut
  • 260 g plain flour
  • 1/2 teaspoon bicarb soda

Recipe's preparation

  1. Preheat oven to 150 (fan-forced)

  2. Add butter, sugar and vanilla to TMX bowl and cream together speed 4 for 1 minute or until pale and creamy. Add egg with blades still running on speed 4 and mix for 30 seconds.

  3. Add cranberries and cocunut mix on Counter-clockwise operation speed 3 for 20 seconds. Add flour and bicarb and mix on speed 4 Counter-clockwise operation for 20 seconds or until combined.

  4. Roll level tablespoons of dough into balls, place on tray and flatten slightly. Bake for 15 minutes and cool biscuits on tray.

Tip

Cranberries can be replaced with sultanas, currants etc.

Simply mill your sugar before starting recipe if you don't have ising sugar on hand.

    Hi Erin,

    I made them last night for our Thermomix Cooking Class. They were a hit.

    I used 100 of Coconut Flour (homemade) and 160 of Almond flour Homemade). Worked beautifully.
