Cranberry, Date & Goji Berries Muesli Bars

  • 100 g sunflower seeds
  • 100 g pepitas
  • 40 g Dates pitted
  • 120 g Cranberries
  • 40 g Goji Berries
  • 60 g coconut oil
  • 30 g Coconut sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Muesli Bars
  1. Preheat oven to 150 degrees celcius.

     

    Line a square baking dish (21 cm) with baking paper and set aside.

     

    Place sunflower seeds, pepitas and dates into mixing bowl and chop 10 seconds, speed 6.  Scrape down the sides of the mixing bowl with spatular.

     

    Add cranberries and goji berries and chop 5 seconds, speed 6.

     

    Add all remaining ingredients and mix 10 seconds, reverse, speed 3.

     

    Transfer mixture into the baking dish and press down lightly with the back of a spoon to flatten.

     

    Bake for 40 minutes (150 degrees celcius) or until browned and cut into approx 8 bars.  Allow to cool  for approximately 1 hour before serving.

Tip

This recipe is delicious with a tablespoon of Chia added along with sunflower seeds and pepitas

    This is a fab recipe! Made it for my kids and their friends everyone loved it! I loved it! Just make sure you allow enough time for it to cool or it doesn't hold together. I served mine from the freezer and it was amazing with a great crunch! I'll be making this again!
