Cranberry Orange and Yoghurt Cake

Ingredients

Cake

  • 300 g sugar
  • 1 Large Orange, zest only
  • 230 g Butter, cubed
  • 1 tsp vanilla extract
  • 4 eggs
  • 1 tsp baking powder
  • 350 g bakers flour
  • 220 g TM Plain Yoghurt, (can use shop bought)
  • 160 g dried cranberries

Recipe's preparation

    Cake
      1. Preheat Oven to 175 C, spray/grease Bundt/cake mould and place in fridge for easy cake removal
      2. Place sugar and orange zest into mixing bowl and grate 5 sec/ speed 9
      3. Add butter and vanilla and mix 20 sec/ speed 5
      4. Add eggs, baking powder, flour and yoghurt  25 sec / speed 5
      5. Scrape sides
      6. Add cranberries 20 sec / Counter-clockwise operation /speed 5
      7. Pour mixture into cake mould and place in preheated oven to cook for 45/50min or until wooden skewer inserted into cake comes out clean.  Allow cakes to cool in tin for 10mins then carefully transfer to wire rack for 1 hour

Tip

Dust with icing sugar and you can serve with brandy butter or brandy butter sauce.  Check my other uploaded recipes
