Crunchy Paleo "ANZAC" Cookies

Ingredients

  • 125 grams pumpkin seeds
  • 65 grams macadamia nuts
  • 150 grams arrowroot flour
  • 100 grams Softened Butter or Coconut Oil
  • 110 grams Maple Syrup or preferred Sweetener
  • 30 grams Desiccated Coconut
  • 1 teaspoon ground cinnamon
  • 2 pinches sea salt

Recipe's preparation

  1. - Place the pumpkin seeds and nuts into mixing bowl and chop 4 Secs / Speed 6

    - Add all other ingredients mix 10 Secs / Speed 6

    - Scoop out tablespoon size blobs onto baking tray and bake on 180C  for 15 mins or until golden brown. They will spread a bit so don put them too close together.

     

    - Remove from oven and place on wire cooling rack to cool. This will get crunchier as they cool.

    Thanks for your feedback it has made me actually look at the recipe and realise some how the quanytities have changed. I didnt notice. I was having lots of problems loading this on the recipe copmmunity. I have now corrected these and it will hopefully fix the dryness you experienced. Sorry abotu that but thank you for leaving the feedback or I would never have double checked it tmrc_emoticons.)

    I've just made these, and mine were very dry.  I should have trusted my instinct when I took the dough out of the Thermomix and added some moisture.  I checked and double checked I hadn't left anything out.  Flavour was good, but just too dry.
